Description
The nose opens with lifted green aromatics of nasturtium, sugar-snap pea, fresh asparagus, and capsicum, giving the wine its distinctive freshness and herbal complexity. On the palate, bright lemon and citrus notes support the aromatic profile, while subtle layers of dried apricot and mange tout add depth and texture. A vibrant natural acidity carries the wine through a long, mouth-watering finish, creating a Sauvignon Blanc that is both refined and energetic.
This is an outstanding food wine, pairing beautifully with fresh seafood, oysters, goat’s cheese, herb-driven salads, and spring vegetables. While immediately appealing for its youthful brightness, the wine also has the structure and balance to reward patient cellaring.

Fermentation takes place in temperature-controlled stainless steel tanks to retain the vibrant varietal character of Sauvignon Blanc. The wine is then left on its lees for an extended period in tank, building texture and complexity while maintaining freshness and clarity.
