Description
The nose is expressive and complex, revealing aromas of lime, citrus blossom, gooseberry, passion fruit, and pineapple, complemented by subtle notes of almond, toasted oak, and flinty minerality. The palate is rich and creamy without sacrificing energy, with vibrant acidity carrying layers of tropical fruit, citrus, and delicate spice through to a long, focused finish. The result is a beautifully textured white that combines generosity with finesse.
An exceptional food wine, it pairs beautifully with lobster, grilled seafood, roast chicken, creamy pasta dishes, and mature goat's cheese.
The Semillon was whole-bunch pressed, while the Sauvignon Blanc was destemmed and gently crushed before both components underwent barrel fermentation at 17°C for approximately 20 days.
The wine matured for 5 months in 330L French oak barrels, after which the final blend was assembled and returned to barrel for a further 5 months. This extended élevage builds texture, complexity, and seamless integration while preserving freshness and varietal character.
