Description
The nose reveals layered aromas of citrus blossom, lemon curd, toasted brioche, and almond, underpinned by subtle mineral freshness. On the palate, the wine is textured and elegant, with a fine, persistent mousse carrying notes of citrus, pastry, and delicate nuttiness through to an exceptionally long finish. There is both richness and tension here - a Blanc de Blancs that balances power with finesse beautifully.
Crafted as a true labor of love, the wine spent five years on the lees, allowing complexity and texture to develop slowly while preserving the bright acidity and purity of Franschhoek Chardonnay.
This Cap Classique pairs beautifully with lobster, oysters, rich seafood dishes, creamy cheeses, or elegant celebrations.
The wine then underwent traditional bottle fermentation and was matured sur lie for five years, developing its hallmark depth, fine mousse, and layered brioche character before disgorgement.
Cellar Master: Tim Hoek
Proprietor Achim von Arnim bought the land for the purpose of producing wine in the Champagne style, called Methodé Cap Classique or MCC in South Africa. An enthusiast whose lust for life is expressed in winegrowing. Achim says simply: “It was as if Cabrière had been waiting for me.”
Achim bought a second property, aptly named Haute Cabrière. The philosophy and speciality is producing wine exclusively from Chardonnay and Pinot Noir. The iconic Chardonnay Pinot Noir blend was a South African first, leading the market in a blend of these varietals.
Currently overseeing the wine-making is 2nd generation Cellar Master, Takuan von Arnim. He shares his father’s philosophy of the importance of terroir and the passion for Chardonnay and Pinot Noir.
