Steenberg Sauvignon Blanc 2025 is a cool-climate Constantia white shaped by freshness, aromatic precision, and the layered site expression that has made the region such a natural home for the variety. This is not a simple, one-note Sauvignon Blanc. It brings together greener, flintier elements with riper fruit tones, giving the wine both lift and breadth while keeping its line firmly intact. For drinkers who appreciate Sauvignon Blanc with real regional character, this is a very convincing expression.
In the glass, it shows a pale straw color with a faint green hue. The nose opens with Cape gooseberry, nettle, lemon zest, Granny Smith apple pith, and white peach, creating a profile that feels both vivid and finely detailed. On the palate, the wine has a generous entry, but the lifting acidity quickly takes over, carrying citrus blossom and quince through a long finish marked by a distinct mineral core. There is freshness throughout, but also enough texture and weight to make it especially good with oysters, goat cheese, grilled fish, or herb-led summer dishes where its acidity and savory edge can work naturally with the food.
This wine was built from a series of Sauvignon Blanc components harvested from different vineyard sites on the estate at different ripeness levels, allowing the final blend to capture a wide range of flavor profiles from flinty, grassy, and green pepper notes to gooseberry and tropical fruit. The grapes were hand-harvested in the cool early morning from 6AM onward to preserve delicate aromatics.
After crushing, the juice underwent skin maceration for 8 to 24 hours at 10°C, then settled overnight before being racked clean and inoculated for fermentation. Fermentation lasted up to 30 days at 11 to 15°C, after which the wine rested on its fine lees for 60 to 90 days before blending, stabilization, and bottling.
