The wine shows a beautiful rose-gold hue with a fine, persistent mousse. Aromas of fresh cherry and wild strawberry lift from the glass, layered with delicate notes of rose petals, Turkish delight, and subtle candied fruit. The grapes are hand harvested and gently pressed to obtain the purest juice fractions. Primary fermentation takes place in temperature-controlled stainless steel tanks at 14–16°C using selected yeast strains to preserve aromatic freshness.
After blending, the wine undergoes secondary fermentation in bottle following the traditional Méthode Cap Classique process, creating its fine bubbles. The wine is then matured on the lees for at least 16 months in cool underground cellars, allowing the mousse to develop finesse and complexity before disgorgement and a small dosage is added to achieve the final brut balance.
