We hand-harvest from seven small vineyard parcels, cool overnight, then ferment in concrete and wooden vats using native yeasts. About 40% of the fruit is destemmed, the rest whole-bunch foot-stomped. Skins stay in contact for 3–6 months to build structure. The wine matures for 16 months in old 4000L foudres and a touch of new oak—bottled unfiltered to express Swartland’s soulful terroir.
