This Chenin Blanc offers lively aromas of pear, granadilla and lime. The palate is fresh and zesty, showing nectarine and some pineapple. The vibrant acidity adds lengh, texture and a crisp, refreshing finish to the wine.
Grapes were handpicked early in the morning at Cavalli, in three separate pickings. Grapes were crushed, pressed and settled overnight to achieve good clarity of juice.
The juice was inoculated with two different yeasts: one aimed at achieving a fuller mouthfeel and an expressive fruit profile. The wines were fermented in stainless steel tanks, with occasional stirring of the lees post-ferment. The wine was blended just 2 months on its lees and prepared for bottling.
