Pressed, juice cold-settled, racked to stainless steel tanks, lightly fined. Sourced from one of the more elevated and cooler sites in the Vale, and it shows in a focused, serious rose of some class. Essence of Sangiovese here with dusty red cherry, plum, dried herbs, rosemary, raspberry. Super dry to taste, concentrated with clean, driving acidity.
The 2019 vintage began with excellent rainfall in winter and early spring which set the vines up very well. Budburst was on time followed by a mild and dry spring. January saw some extremely warm days but fortunately the vine canopies had good vigor which helped to shade the bunches during the hot conditions.
The final ripening period continued to be dry however, temperatures were mild and conditions were ideal for steady ripening and flavor development. The fruit was in great condition at picking and had excellent flavors and aromas.

In 1835, Governor Macquarie directed 6 explorers to find routes to open up the Hunter Valley. One wild and windy night, as the explorers attempted to cross a flooded creek, their strongest horse - Cockfighter - drowned bravely trying to get his rider across the raging waters. When convict gangs were later sent to construct a bridge over what was now known as Cockfighter's Creek, they swore that on stormy nights you would see Cockfighter's Ghost galloping free across the countryside. The Legend was born.
