This is a full-blown purple and dense wine with black cherry, aniseed, sweet spice notes and new shoe leather, comforting and familiar! Maybe even a touch of eucalyptus.The mouth fills mouth with ripe, sweet berries and is nicely counterpointed by the cranberry tartness on the finish, revealing that this shiraz hails from the coolest part of McLaren Vale.
Primary fermentation took place in stainless steel fermenters with pump overs taking place twice a day. At the end of fermentation it was gently pressed off to tank where malolactic fermentation was allowed to finish. The wine was matured in new, 1 and 2 year old French oak barriques and puncheons for 10 months to retain its fresh fruit flavors before being filtered and bottled.

In 1835, Governor Macquarie directed 6 explorers to find routes to open up the Hunter Valley. One wild and windy night, as the explorers attempted to cross a flooded creek, their strongest horse - Cockfighter - drowned bravely trying to get his rider across the raging waters. When convict gangs were later sent to construct a bridge over what was now known as Cockfighter's Creek, they swore that on stormy nights you would see Cockfighter's Ghost galloping free across the countryside. The Legend was born.
