Classic and refined, the 2021 Delheim Cabernet Sauvignon from Stellenbosch opens with layered aromas of cassis, ripe plum, cedar wood, and a hint of cigar box. Subtle herbaceous notes add complexity, while the palate is structured yet elegant, with fine tannins and seamless oak integration. Rich cassis flavors carry through to a long, lingering finish. A polished South African Cabernet that pairs beautifully with red meat and has excellent aging potential.
The handpicked grapes were fermented in upright fermenters with the aid of selected yeast strains. Temperature was maintained at 25-28°C. A combination of pump-overs and rack-and-returns were used during fermentation. The wine spent an average of 18 days on the skins. Matured for 14 months in 300L French oak barrels, of which 45% were new.
