We harvested the grapes in two passes to capture both bright acidity and ripe tropical fruit. After destemming and a gentle crush, the juice soaked on the skins for two hours to build texture and flavor. A cool fermentation at 13°C over three weeks preserved the wine’s freshness and aromatics. Post-fermentation, it was racked off the lees and prepped for bottling—pure, expressive, and crafted with care for everyday enjoyment.
