Pale gold colour with strings of fine bubbles. Fresh aromas of green stone fruit, apples, and lime, with a touch of leesy complexity. The palate is clean and fresh with nuances of limes, flinty stones, and tart apples. Has a linear and fresh, zippy finish with a dry (Brut) finish on the mid palate.
The grapes were transferred to the press by hand and gently whole bunch pressed. Only the free run juice was used. After the juice settled, the clear juice was transferred to stainless steel tanks for separate fermentations. The final base wine blend or cuvee selection was made and prepared for the second fermentation (formation of the CO₂ bubble in the bottle) by the addition of liqueur de tirage, which took place in the bottle under crown cap (traditional Cap Classique method.) The wine was left to mature on the lees, in the bottle for 26 months before it was riddled and disgorged.

Fairview is a working farm, housing a collection of micro-businesses all sharing in a common goal – to craft artisanal and sustainable produce, with a focus on fine wine and cheese. Everything they do is driven by their philosophy of being honest, honoring their heritage and ensuring their ingenuity. Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, they are one of the few farms that proudly own all their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.
