Dark red with bright red rind in the glass. A very aromatic nose with herbal notes of rosemary, lavender, bright red berries and typical hints of cracked black pepper. The palate is fresh with red fruit flavors complemented with peppery spice and fine tannins. The wine is still firm and will age well.
Picked at 22,5 – 23,5 ̊B to capture the cool climate and fresh style of the wine. 20% whole bunch clusters were added to the bottom of a Foudre. The rest of the grapes were destemmed, hand sorted and placed on top. Fermentation was allowed to start naturally with the indigenous yeast from the vineyard. Punch downs and pump overs are done up to three times daily. A total of 10 days before pressing. Malolactic fermentation took place in older French oak barrels. After 18 months in barrels, a barrel selection was made. The wine was bottled with minimal stabilization and filtration.

Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, they are one of the few farms that proudly own all their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.
