Grown on deep red Oakleaf soils in Darling’s coastal vineyards, our Sauvignon Blanc grapes are harvested at dawn for peak freshness. Gently pressed and cold-settled for 48 hours, the juice is then cool-fermented in stainless steel to highlight its tropical thiol profile. After fermentation, the wine rests on fine lees for three months, enhancing texture and complexity before final blending and bottling.
