Inspired by the elegance of 18th-century Claret, this Stellenbosch red blend is a bold yet refined showcase of complexity and age-worthiness. Aromas of cassis, mulberry, and cedar reveal a Cabernet-driven core, while Syrah lends its signature spice with black cherry, black pepper, and a touch of mocha. Hints of sandalwood, leather, and Christmas cake round out the palate. Firm tannins and bright acidity lead to a clean, dry finish with exceptional aging potential.
A warm, dry season in Simonsberg gave us smaller berries with intense flavor concentration and naturally lower yields. We hand-sorted and gently crushed the fruit, allowing a three-day cold soak to deepen color and aroma. Natural fermentation kicked off in stainless steel, with daily pump-overs to enhance structure. After extended skin contact, the wine went into French oak for malolactic fermentation and 18 months of aging, developing layered complexity and elegant tannin integration.
