The 2019 vintage offered a cooler, more elegant growing season—perfect for crafting a wine with finesse and purity. Hand-picked grapes were gently destemmed, cold-soaked for three days, then allowed to ferment naturally in stainless steel tanks with twice-daily pump-overs. After fermentation, we kept the wine on the skins for 2–3 weeks to enhance structure and depth. It matured for 12 months in 300L French oak barrels, bringing balance and refinement to this exceptional Stellenbosch blend.
