Lively and bright in appearance, the nose bursts with aromas of blackcurrant leaf, wet slate, and limes. Rich, complex flavors of kiwi fruit and lemon zest follow on the palate. Textured with a coarse salinity on the mid-palate, this wine is a pure expression of Sauvignon Blanc. Youthful and elegant, it concludes with a long, zesty, lingering finish.
A pure Sauvignon Blanc that reflects a sense of place rather than technique. Grapes were harvested starting at 4:00 am from a selection of six different high-lying blocks capable of withstanding the unique winemaking process. The blocks are a combination of biodynamic, organic, and sustainably farmed vineyards. No sulfur was added at crush, and fermentation was wild. The wine was left to mature on the lees for 12 months in a combination of stainless steel tanks and 20% neutral oak barrels.
