Bright notes of lemongrass lift the palate, while extended lees contact adds a silky, creamy texture and refined minerality. Subtle oak aging brings gentle spice and balance, creating a wine that’s both fresh and layered. Enjoy it with oysters and cucumber-lime granita, grilled asparagus with lemon zest and parmesan, or seared scallops in citrus butter.
Hand-harvested from high-altitude Stellenbosch vineyards, our Sauvignon Blanc grapes were gently crushed and left on the skins for six hours to extract depth and aroma. Fermentation at 12–14°C over 10 days preserved the wine’s vibrant freshness. Only the free-run juice was used, ensuring purity of fruit and a crisp, mineral-driven finish that truly reflects our Jonkershoek Valley terroir.
