As a winemaker, I take great care in crafting this Cap Classique from start to finish. We handpick the grapes at optimal ripeness, press whole bunches gently to extract only the finest cuvée juice, and cold-settle it overnight for clarity. Fermentation takes place in stainless steel at 15–17°C, with a portion of Chardonnay aged in older French oak for added depth. We avoid malolactic fermentation to retain crispness, then age the wine on the lees in bottle for 12 months to build complexity and finesse.
