The wine presents an understated bouquet that gently unfolds as it breathes in the glass, revealing delicate hints of apple, freshly cut hay, and a subtle ginger spice. As you take your first sip, the palate is greeted with a harmonious balance, where the focus is more on the wine's intriguing texture than on overt flavors. This textural experience is further enhanced by a vibrant mineral core that runs through the wine, providing a sense of freshness and depth. A touch of citrus emerges on the finish, adding a bright, zesty note that lingers pleasantly.
As the wine departs, it leaves behind a slight tannic grip, adding to its complexity and inviting you to take another sip to explore its layers further. This wine is a refined and contemplative experience, perfect for those who appreciate subtlety and nuance in their glass.

This Chenin Blanc has been fermented and aged as naturally as possible, without intervention and in search of an authentic reflection of its origin. The grapes were handpicked in the early morning hours to preserve fruit integrity.
The grapes were then gently pressed after a brief period of skin contact. The juice was settled overnight without the use of settling enzymes and from here it was fed directly to seasoned French oak barrels where fermentaion occured spontaneously. The wine was aged on its lees in barrel for 9 months, with no batonage. The wine was bottled after a coarse filtration in November 2020.

Metzer Family Wines was established in 2006 with a mission to produce wines that are expressive and unique, employing artisanal, non-interventionist principles in the vinification process. The guiding principle behind this approach is that winemaking must always respect the fruit. On the red side, our focus is largely on Syrah, as we believe few red grape varieties are as capable of responding so articulately to different terroirs, while also embodying a perfect balance of masculine and feminine qualities. When it comes to white varieties, our passion is Chenin Blanc. With its versatility and immense range of flavors, it is a variety that naturally lends itself to minimalist winemaking.
Our grapes are ethically cultivated, respecting both the environment and human resources. In the cellar, great emphasis is placed on minimal handling of the fruit, and no mechanical interventions with pumps, filters, or reverse osmosis machines are ever used in the process. Fermentation by indigenous yeasts, alive on the grapes and resident in the cellar, leads to long, stable extraction times. Wines are bottled unfined and unfiltered to preserve the "life-forces" from vineyard to bottle.
