The 2023 harvest began at first light, with hand-picking done in the cool morning hours to lock in freshness and balance. Grapes were brought into the cellar at 23° Balling, then gently crushed. We sent a portion of the juice to amphora for a wild fermentation, allowing natural yeasts to express the vineyard’s character. The rest was inoculated and fermented in barrel to build texture and complexity. This dual-ferment method brings depth, vibrancy, and a distinct artisanal edge to the final wine.
