On the nose, you are met with dark notes of black cherry, cassis, and licorice which make the mouth water instantly. The palate carries these aromas through, with succulent berry flavors complemented by rich vanilla undertones. There is a minerality that balances out the richness, with iodine and tannins making for an interesting first sip. You will also find flavors of woodsmoke and an earthiness that gives our Midnight a lingering, meaty finish. The Midnight wine from our Tulbagh wine estate is the best example of this terroir’s propensity for developing grapes that have deep aromas and meaty flavors.

The Midnight grapes are sourced from our wine farm in Tulbagh and are arguably one of the best representations of the terroirs in the Elements Range. Tulbagh in the Breede River Valley has a hot climate that has cool evenings, with decomposed shale soil. The climate leads to grapes that have developed rich flavor over time and that have retained their acidity. Barrels are seasoned, dry, and are without toasting for up to five years before being steamed. They are then used for 16 months to make the wine.

Paserene is a small, family-operated winery owned by Martin Smith and Ndabe Mareda, the sole purpose of which is to produce high-end, luxury wines. Great care was given to ensure that the wines produced, and artwork on the labels, are truly authentic to its “sense of place and people” and will guarantee a lasting legacy. The name Paserene comes from the Latin word Passeriformes, the order of "traveling and free" birds containing swifts and swallows. Paserene is situated in the quaint town of Franschhoek and is home to their award-winning wine range. A professional and contemporary tasting lounge is situated on the property.
