Dark cherry, cassis, and blackberry notes lead the way in this elegant Stellenbosch Cabernet Sauvignon, layered with hints of dark chocolate, dried cranberry, and gentle oak spice. The palate is plush and fruit-driven, balanced by refined tannins and a long, fresh finish that suggests excellent aging potential. A classic expression of Tokara's high-altitude terroir, this wine pairs beautifully with grilled meats, veal, or smoked game.
We hand-harvested at peak ripeness, sorted every bunch, and cold-soaked the must to extract color and purity before a natural fermentation. Gentle pump-overs and punch-downs preserved finesse, followed by 19 months of aging in French oak, 20% of it new. Each component was blended with care, fined lightly, and bottled unfiltered to preserve its Stellenbosch character.
