Its poised acidity and saline freshness give this wine remarkable structure and ageability—promising elegance for a decade or more. Hand-harvested from our Simonsberg vineyards, only the free-run juice from our top Chardonnay blocks is barrel-fermented in 27% new French oak. The wine matured for 11 months on fine lees with regular stirring, adding richness and complexity. Full malolactic fermentation lends a creamy texture, perfectly balanced by vibrant acidity and layered citrus purity.

South African Tokara winery, on the R310 outside Stellenbosch, is nestled among vineyards and olive groves on the crest of the Helshoogte Pass with sweeping views across False Bay and all the way to Table Mountain. With elevations of between 350m and 550m, soil profiles are of weathered sandstone and decomposed granite - the combination lending structure, perfume and longevity to their wines.
