We hand-harvest each vineyard block at peak ripeness between 21°–23° Balling to capture the perfect balance of acidity, pH, and flavor. After gentle de-stemming and pressing under inert conditions, the juice is cold-settled and then fermented at 18°C in stainless steel using selected yeasts to preserve purity and freshness. The final blend was carefully composed, cold-stabilized, and bottled in June 2024—crafted to express the best of our coastal Sauvignon Blanc.

South African Tokara winery, on the R310 outside Stellenbosch, is nestled among vineyards and olive groves on the crest of the Helshoogte Pass with sweeping views across False Bay and all the way to Table Mountain. With elevations of between 350m and 550m, soil profiles are of weathered sandstone and decomposed granite - the combination lending structure, perfume and longevity to their wines.
