Crafted from old vine Chenin Blanc and a touch of Sémillon, this wine captures the soul of the Cape’s ancient vineyards and rewards both now and with cellaring. A benchmark white blend, built for longevity and lovers of complexity.
We hand-sort and whole-bunch press each parcel, keeping the juice raw and cloudy for wild fermentations in old barrels, foudres, and concrete eggs. Fermentations range from 3 weeks to 11 months, followed by 12 months on gross lees and 5 months on fine lees in tank. No fining, just gentle, honest winemaking that lets our old-vine Chenin and Sémillon speak of place and purity.
