The grapes were hand harvested into small lug boxes, then fully destemmed and gently crushed into open-top fermenters. Fermentation occurred using natural yeasts, with temperatures reaching 29–31°C, and the wine remained on skins for 12–15 days with regular pigeage (1–4 times daily) for extraction.
Following fermentation, the wine was basket pressed and transferred directly to barrel, where it underwent maturation for 22 months in predominantly new French oak. Blending took place after 9 months, with multiple rackings to clarify and refine the wine over time, resulting in a polished and age-worthy final blend.
