On the palate, vibrant red and black fruits—cherries, plums, and redcurrants—are framed by finely structured tannins and a cool mineral acidity. Hand-harvested Cabernet Sauvignon from nine clones was carefully sorted and vinified in small batches. Fermentation took place in concrete tanks and terracotta amphorae, with gentle pump-overs and punch-downs to balance flavor, aroma, and tannin extraction. Select parcels received extended maceration, while micro-vinification in oak and amphora aging added depth. Each component was blended with precision before bottling, ensuring elegance and complexity.
