For the Melck’s Red, we hand-harvest grapes from select vineyard blocks across the estate to ensure balance and depth. Each variety—Merlot, Cabernet Sauvignon, Cabernet Franc, and Shiraz—is fermented separately in a mix of stainless steel tanks and open-top fermenters to preserve character. The wine is then matured for 16 months in seasoned French oak barrels, allowing subtle integration of oak while letting the fruit shine through.
