Our Thelema Cabernet Sauvignon is crafted with meticulous care. After gentle de-stemming and whole berry sorting to preserve purity, fermentation takes place in stainless steel tanks using a selected yeast strain to guide flavor development. Gentle pump overs and punch downs extract deep color, structure, and finesse. The wine undergoes malolactic fermentation in barrel and matures for 18 months in French oak—40% new—to bring elegance, depth, and age-worthy complexity.
