Hand-harvested from old vines—some over 50 years in age—this Chenin Blanc is gently pressed and fermented in concrete egg vessels and neutral barrels. Each batch is carefully blended after four months and returned to concrete for further ageing, enhancing the wine's texture and complexity while preserving vibrant fruit purity and minerality from Stellenbosch’s old vine terroir.

Waterford Estate was established in 1998 with the intention of producing the very best wines in the country. Being based on the Helderberg Mountain, in Stellenbosch, the Estate excels in producing Red wines such as Cabernet Sauvignon and Shiraz, the main two blending components in their Flagship The Jem. They chose to use only half of the total 120 hectares of their land for the planting of vines in order to preserve and protect the natural fauna and flora.
