We harvested early in the cool morning light, sorting the fruit right in the vineyard for precision. Whole bunch pressing gave us raw, cloudy juice—just how we like it. Fermentation was wild and slow, unfolding naturally in old French barrels over two months. The wine rested on its lees for a full year, then spent another six months in tank to gain added texture and purity. No fining, no fuss—just honest, patient winemaking that lets the vineyard speak.
