Silky and expressive, this Stellenbosch Shiraz opens with aromas of dark cherries, spiced plum, and subtle hints of licorice. The palate unfolds with plush fruit, grounded by a mineral-driven mid-palate and finishing with a refined flintiness and a soft, creamy texture. A sophisticated red with depth and finesse, it's a standout pairing with rich dishes like springbok fillet roulade, wild mushroom sauce, or crispy sweet potato fries.
Hand-harvested Shiraz grapes were gently vinified with 25% whole bunch fermentation to enhance structure and perfume. The remaining 75% were destemmed and fermented as whole berries in French oak casks, with twice-daily pump-overs for refined tannin extraction. After 21 days on skins, the wine matured for 12 months in 300L French oak barrels—40% new, the rest seasoned—for depth and balance.
