The grapes were hand harvested in small batches from selected estate vineyards on the Simonsberg, rooted in decomposed granite soils with southwest-facing slopes that promote balanced ripening. After careful sorting, fermentation took place in a combination of open-top fermenters and stainless steel tanks, with punch-downs and pump-overs used to extract color, flavor, and tannin.
Following fermentation, the wine was matured for 18 months in 300L French oak barrels, allowing for integration and complexity. Only the finest barrels were selected for the Grand Reserve blend, ensuring depth, structure, and consistency in this flagship wine.
