The grapes for Black Swan are sourced from carefully selected vineyard parcels on the Steenberg estate in Constantia, where cool ocean influences allow for slow, balanced ripening. Fruit is harvested in the early morning to preserve aromatic purity before being gently pressed and cold settled.
Fermentation takes place in temperature-controlled stainless steel tanks to retain the vibrant varietal character of Sauvignon Blanc. The wine is then left on its lees for an extended period in tank, building texture and complexity while maintaining freshness and clarity.
