Smooth, refined tannins and balanced acidity create structure and finesse, while a touch of Mourvèdre adds earthy depth to the mid-palate. A complex, fruit-driven Stellenbosch Shiraz with both vibrancy and aging potential.
The 2020 vintage offered ideal conditions—cooler temperatures and steady rainfall led to slow ripening and beautifully developed tannins. Grapes were hand-harvested, destemmed, and fermented as whole berries over 14 days to preserve freshness and structure. After gentle pressing, the wine aged in seasoned French oak barrels, with blending done at six months and two more rackings before bottling. It’s a Shiraz that captures Helderberg elegance, complexity, and long-term aging potential.

Waterford Estate was established in 1998 with the intention of producing the very best wines in the country. Being based on the Helderberg Mountain, in Stellenbosch, the Estate excels in producing Red wines such as Cabernet Sauvignon and Shiraz, the main two blending components in their Flagship The Jem. They chose to use only half of the total 120 hectares of their land for the planting of vines in order to preserve and protect the natural fauna and flora.
