Harvest began at first light, with four separate pickings to highlight the unique terroirs within our Chenin Blanc vineyard. Each batch was whole-bunch pressed and gently settled for two days. Based on soil and site, we selected pure yeast strains to enhance the individual flavor profiles. Fermentation took place in a mix of 225L, 300L, and 500L barrels, with 7 months on the lees for added texture and complexity. The result is a beautifully expressive, site-driven Chenin we're truly proud of.
