Creation Elation Sparkling Pinot Noir 2023 is a cool-climate Hemel-en-Aarde sparkling wine made in the traditional method, with Pinot Noir taking the lead and a small portion of Chardonnay adding lift and line. Sourced from a high-lying, ocean-influenced valley southeast of Cape Town, it reflects the region’s natural freshness and growing reputation for fine sparkling wine. This is a bottle built less on overt richness and more on precision, length, and the slow-building texture that comes from extended lees aging.
In the glass, the wine shows fine, energetic bubbles and a palate shaped by mouthwatering acidity and a gradual increase in breadth from the Pinot Noir component. Aromas of citrus, nectarine, raspberry, and brioche give it both brightness and depth, while the Brut Nature style keeps the finish dry, focused, and especially clean. There is real structure here, but also plenty of immediacy, making it especially good with oysters, sushi, smoked salmon, or simple roast chicken where its freshness and autolytic detail can work naturally with the food.

The fruit was hand-harvested and the wine was made in the traditional Champagne method. The final blend is 94% Pinot Noir and 6% Chardonnay, with the Pinot Noir contributing structure and breadth while the Chardonnay sharpens the wine’s freshness and line. After secondary fermentation in bottle, the wine spent more than 48 months on the lees before disgorgement, building fine mousse, brioche-like complexity, and greater palate depth without sacrificing tension.
