The DeMorgenzon DMZ Sauvignon Blanc 2025 is a fresh yet structured expression of Stellenbosch Sauvignon Blanc, sourced from the cool, ocean-influenced slopes of Stellenboschkloof. This wine leans toward restraint and precision, offering more texture and depth than a typical easy-drinking Sauvignon Blanc.
The nose is clean and lifted, showing aromas of lemon zest and snap pea, followed by subtle green fruit notes. On the palate, the wine opens with ripe kiwi and winter melon, carried by a bright citrus line that gives energy and focus. While light in style, there is a noticeable textural weight from lees contact, adding balance and length. The finish is fresh, zesty, and persistent, making this a versatile and food-friendly white.
A natural pairing for light summer fare, seafood, salads, and fresh, herb-driven dishes.
The grapes were harvested from south-facing vineyards on weathered granite soils, benefiting from cooling ocean breezes. After gentle destemming and light pressing, the juice was handled with minimal oxygen exposure and cold settled overnight without enzymes.
Fermentation was carried out using selected yeasts at cool temperatures to preserve aromatics, followed by extended lees aging with periodic stirring to build texture and integrate flavors. This approach results in a Sauvignon Blanc that balances freshness with subtle complexity and structure.

De Morgenzon, ‘the morning sun,’ was so named as it is the first part of the Stellenboschkloof valley to see the sun because of its high altitude and aspects. Their slopes rise from about 200m to nearly 400m above sea level and their vistas embrace Cape Town, Table Mountain, Cape Point, Cape Hangklip, the Hottentots Holland mountains, Helderberg and Simonsberg with the ocean as a backdrop. The reputation of Wendy and Hylton Applebaum’s estate continues its ascent - one regularly marked by genuinely prestigious international and local awards.
