Sauvignon Blanc and Semillon grapes were hand-harvested in early March from south- and southeast-facing vineyards planted on granitic soils at elevations ranging from 50 to 240 meters above sea level. The varieties were vinified separately in French oak barrels, with 50% new oak and the remainder second, third, and fourth fill barrels. The wine matured on its lees for 10 months to build texture and complexity before bottling, followed by an additional 12 months of bottle aging prior to release.
