Description
In the glass, the wine shows fresh aromas of apricot and red berry fruit with a subtle mineral edge. The palate is vibrant yet polished, offering flavors of fresh apricots, delicate raspberry, sea salt, and wet stone minerality. A creamy texture adds depth, while the wine’s natural freshness keeps everything beautifully balanced. The finish is long, clean, and quietly elegant.
This is a rosé made to elevate warm afternoons and celebratory meals alike. It pairs wonderfully with lobster, grilled seafood, mango and avocado salads, or light summer dishes.
One day of juice settling followed by racking before spontaneous fermentation at 14°C for approximately 20 days. The wine is matured on fine lees for an additional 7 months with a regular batônnage before the final blending and bottling. Approximately 20% was fermented in a 2 year old 500 liter Baron French oak barrel and stirred on the lees until filtered.
