Each clone was carefully destemmed into stainless steel fermenters, with 10% left as whole clusters for added complexity. After a three-day cold soak, spontaneous fermentation began, lasting about 10 days with gentle pump-overs for balanced extraction. The wine then spent 10 months maturing in second- and third-fill barrels before blending in stainless steel, resting for two months to integrate before gentle filtration and bottling.
