Sourced from some of the oldest bush vines in the Paarl region, these low-yielding vineyards produce only 3–4 tons per hectare. While yields are modest, the result is fruit of exceptional quality, with high flavor
concentration and minimal sunburn. The maturity and resilience of these vines contribute depth, complexity and a distinctive regional character to the wine.
The grapes were destemmed and kept as whole berries before fermentation in stainless steel tanks. Gentle extraction was achieved with two pump-overs per day, increasing as needed to introduce more oxygen when required.
Dried stems were reintroduced into the ferment for added aromatic complexity and a perfumed character. After fermentation, the wine was pressed off and matured for 8–10 months in a combination of barrels and ceramic clay amphora.
