We fermented the Cabernet in open-top fermenters, using manual punch-downs three times daily to gently extract color, flavor, and tannin. It matured for 18 months in French oak, with just 20% new barrels to let the fruit shine while integrating structure and depth. Bottled on November 20, 2023, this wine reflects our careful balance between purity, power, and finesse crafted for both early enjoyment and graceful aging.
