Tokara Rosé 2025 is a Western Cape Shiraz rosé built in a bright, fruit-forward style, with enough savory detail to keep it from feeling overly simple. In the glass, it shows a brilliant salmon color with a vibrant core. The nose opens with fresh strawberry and cranberry, backed by an intriguing fennel bulb note that adds lift and subtle complexity. On the palate, the wine is fresh and crisp, with juicy berry flavors that carry cleanly through the finish. It would pair especially well with charcuterie, grilled prawns, summer salads, or lighter Mediterranean-style dishes where its fruit and crisp acidity can work naturally at the table.

The grapes were destemmed and crushed directly to press, with the juice left in contact with the skins for 2 hours to extract color. Two press fractions were taken and handled separately.
After cold settling overnight, the juice was racked and inoculated before fermentation in stainless steel tanks at 18°C. The wine then remained on its lees in tank for one month before clarification and bottling, helping preserve freshness while adding a little extra texture.

South African Tokara winery, on the R310 outside Stellenbosch, is nestled among vineyards and olive groves on the crest of the Helshoogte Pass with sweeping views across False Bay and all the way to Table Mountain. With elevations of between 350m and 550m, soil profiles are of weathered sandstone and decomposed granite - the combination lending structure, perfume and longevity to their wines.
