Description

The Bouchard Finlayson Crocodile’s Lair Chardonnay 2025 is a distinctive single-vineyard wine from the famed Kaaimansgat vineyard, perched high in a cool, secluded valley near Walker Bay. Known for its late ripening and remarkable consistency, this site produces Chardonnay with both intensity and precision.

The nose is expressive and layered, with notes of lime blossom, citrus peel, and flinty minerality, followed by hints of apricot and subtle yeast complexity. On the palate, the wine is textured yet vibrant, showing flavors of pear, yellow peach, and citrus, supported by a bright, fresh acidity. There is a natural richness here, balanced by a clean mineral edge, leading to a long, persistent finish that continues to evolve in the glass.

his is a Chardonnay that rewards attention, pairing beautifully with a mild tandoori salmon and coriander chutney, leafy herb salad with a light drizzle of miso dressing, or classic avocado ritz.
The grapes were hand-harvested from the high-altitude Kaaimansgat vineyard (±700m above sea level), where cool conditions extend the growing season and enhance acidity. After pressing, the juice was given controlled oxygen exposure to remove unwanted phenolics and promote clarity.

Fermentation and maturation took place in French oak barrels (approximately 20–22% new) for around 7–8 months, with the wine remaining on its lees without bâtonnage. A gradual move toward larger barrels supports fruit purity and restrained oak influence, resulting in a Chardonnay that balances texture, freshness, and site expression.
