Haute Cabrière Silk Nectar is a Cap Classique sparkling wine made from Chardonnay and Pinot Noir using the traditional method of secondary fermentation in bottle. The style is deliberately softer and slightly sweeter, with extended lees aging adding texture and complexity while preserving the freshness expected from quality South African sparkling wine.
The palate opens with bright citrus before moving into richer honeycomb notes and a smooth, silky texture. The measured dosage rounds out the fruit and gives the wine a more indulgent profile without losing balance or lift. The grapes were hand-harvested and vinified for traditional-method sparkling wine production, with secondary fermentation taking place in the bottle. The wine then matured on the lees for 18 months to build fine texture and integrate its citrus and richer honeycomb character. A carefully balanced dosage was added before release to create the wine’s softer, slightly sweeter style while maintaining freshness and poise.
