La Motte Reserve Collection Cap Classique is a Chardonnay and Pinot Noir sparkling wine made in a polished, traditional style, with enough lees influence to bring depth while keeping the wine bright and composed. As a non-vintage Cap Classique, it aims for consistency and balance rather than vintage variation, drawing on reserve wine to add breadth and complexity. The nose opens with citrus, brioche, and roasted cashew, giving the wine both freshness and a gently savory edge. The fruit was sourced from vineyards across a range of soil types and climatic conditions, with all vines trellised for even ripening and careful canopy management. Grapes were harvested between 18° and 20° Balling and whole-bunch pressed, with each component fermented separately before blending.
The final blend, completed in 2023, included 20% reserve wine, half of which had been matured in older French oak barrels to add extra depth. After blending, the wine was sweetened, inoculated with cultured yeast, and bottled for secondary fermentation. It then spent 24 months on the lees before disgorgement and final corking under wire muzzle.
