Description

Paserene Emerald 2025 is a Western Cape Sauvignon Blanc that brings together equal parts Elgin and Franschhoek fruit. Elgin contributes cool-climate acidity and aromatic lift, while Franschhoek adds riper tropical character and a broader palate. The result is a more textured, composed expression of Sauvignon Blanc, with freshness at its core but enough weight to move beyond a purely crisp, linear style.

The nose opens with citrus zest, ripe tropical fruit, and a subtle blackcurrant note. On the palate, the wine is round and silky, with bright acidity providing balance and definition. Extended maturation in seasoned, untoasted barrels adds texture without introducing overt oak flavor, allowing the fruit and regional character to remain clear through the lingering finish. It would pair well with grilled fish, roast chicken, goat cheese, or seafood served with fresh herbs and citrus.

This is a Sauvignon Blanc with immediate appeal, but its texture and acidity should allow it to develop well over the next several years.
The fruit was sourced equally from Elgin and Franschhoek. Elgin’s cool climate and Bokkeveld shale soils contribute aromatic intensity and bright acidity, while Franschhoek’s more moderate conditions and sandy soils bring riper tropical fruit and broader texture. The wine matured for 16 months in seasoned, untoasted barrels that had been air-dried for up to five years and steamed before use. This restrained oak treatment was intended to build texture while preserving the wine’s fruit purity.

Paserene is a small, family operated winery owned by Martin Smith and Ndabe Mareda, the sole purpose of which is to produce high-end, luxury wines. Great care was given to ensure that the wines produced, and artwork on the labels, are truly authentic to its “sense of place and people” and will guarantee a lasting legacy. The name Paserene comes from the Latin word Passeriformes, the order of "traveling and free" birds containing swifts and swallows. Paserene is situated in the quaint town of Franschhoek and is home to their award-winning wine range. A professional and contemporary tasting lounge is situated on the property.
