Waterford Estate Kevin Arnold Shiraz 2021 is a Stellenbosch red built around Helderberg fruit, savory spice, and polished structure. The style balances ripe fruit with freshness and restraint, while a small Mourvèdre component adds earthy depth and extra dimension through the mid-palate.
The nose opens with savory plum, red berries, black pepper, cinnamon, and clove. On the palate, the fruit remains generous but focused, supported by smooth tannins and balanced acidity. Subtle earthy notes from the Mourvèdre add complexity without distracting from the Shiraz character, while the finish stays composed and persistent. It would pair especially well with grilled lamb, beef, venison, slow-cooked meats, or dishes built around warm spices.
This is a structured, age-worthy Shiraz that is already expressive but should continue to develop well over the next several years.
The grapes were hand-harvested, destemmed, and fermented as whole berries over 14 days to preserve freshness and structure. After gentle pressing, the wine matured in seasoned French oak barrels. Blending took place after six months, followed by two further rackings before bottling to support integration and clarity while keeping the fruit and spice profile at the center of the wine.

Waterford Estate was established in 1998 with the intention of producing the very best wines in the country. Being based on the Helderberg Mountain, in Stellenbosch, the Estate excels in producing Red wines such as Cabernet Sauvignon and Shiraz, the main two blending components in their Flagship The Jem. They chose to use only half of the total 120 hectares of their land for the planting of vines in order to preserve and protect the natural fauna and flora.
